Blueberry Pancakes

Sweet blueberry pancakes! I was feeling crummy this morning, until I remembered my fresh NJ blueberries in the fridge, and my pancake mix in the cupboard. Now I'm feeling much better!

With pancakes now on the brain, I can't help but think of the Pannenkoekenboot, or "Pancake Boat," I read about on Serious Eats. A boat ride around a city in the Netherlands plus all you can eat pancakes? Don't ask twice! Not only do they serve all-you-can-eat pancakes, but they offer ice cream sundaes for dessert. Dessert?! After pancakes?! Well, this is a country that eats chocolate sprinkle sandwiches, afterall. I like how these NL'ers think!
